{"id":558,"date":"2022-01-02T23:25:59","date_gmt":"2022-01-02T23:25:59","guid":{"rendered":"https:\/\/carrotseverywhere.com\/?p=558"},"modified":"2022-01-02T23:25:59","modified_gmt":"2022-01-02T23:25:59","slug":"butterscotch-pecan-ice-cream","status":"publish","type":"post","link":"https:\/\/carrotseverywhere.com\/?p=558","title":{"rendered":"Butterscotch-Pecan Ice Cream"},"content":{"rendered":"<div><b>For the ice cream:<\/b><\/div>\n<div>\u00be cup dark brown sugar<\/div>\n<div>6 tablespoons white sugar<\/div>\n<div>1 cup whole milk<\/div>\n<div>3.5 cups half-and-half<\/div>\n<div>4 large egg yolks<\/div>\n<div>1 tablespoon vanilla extract<\/div>\n<div>1 teaspoon tapioca powder<\/div>\n<div><\/div>\n<div><b>For the buttered pecans, brown in a skillet or in the oven:<\/b><\/div>\n<div>1\u00bd tbsp. butter<\/div>\n<div>1\u00bd cups pecan halves<\/div>\n<div>\u00bc tsp. coarse salt<\/div>\n<div><\/div>\n<div>In a large microwave-safe bowl (8 cups), beat eggs and sugar until mixture is thick. Add milk and beat well. Microwave mixture on medium (50 percent) until slightly thickened (8-12 minutes depending on your microwave power); stirring \/ whisking every 2-3 minutes. Add the tapioca powder dissolved in a little milk.<\/div>\n<div><\/div>\n<div>Chill. Add the half-and-half and vanilla. Cool in refrigerator and chill overnight if possible.<\/div>\n<div><\/div>\n<div>Freeze in an ice cream machine. Add the pecans at the end.<\/div>\n<div><\/div>\n<div>It made about a quart and a pint.
